Chicken Tortilla Soup

I love me some tortilla soup!! Last night I made Chicken Tortilla Soup and it turned out great. Its soo easy to make. When I have time I'm going to play with make it with fresh veggies :) but I needed a quick meal and very inexpensive last night so here it goes
Chi-Chi's Chicken Tortilla Soup
Ingredients
2 Soft Taco Tortillas cut into thin strips
3 cups of water
3 Chicken Flavored Bouillon Cubes
1 package of taco season mix
1 jar (16 oz) of salsa
2 cans(12.5 oz) of premium chunk of chicken
1 can (15 oz)of black beans, drained and rinsed
1 can (11 oz)corn with red and green peppers
Sour Cream if desired
Directions:
Place tortilla strips onto baking pan. Lightly spray strips with nonstick cooking spray. Bake at 400F until crip, about 5 minutes. Meanwhile, in large saucepan, combine water, bouillon, taco seasoning mix and salsa. Bring mixture to a boil. Reduce heat and simmer for five minutes. Add chicken, beans and corn. Heat until warmed through, about 10 minutes. Ladle into warm bowls and top with tortilla crsps and sour cream, if desired.

I'm always trying to get Rob to try soup and I think this one might get a five =) (we rate my meals 1-5 - it works better than "yeah, it was good=)
